JOB BRIEF – CHEF DE PARTIE
We are looking for an enthusiastic chef de partie to oversee a section of the kitchen, be it pastry, butchery, fish, sauces, vegetables. This is a chance to work more closely with – and be inspired by your Head Chef.
We need someone who’s got bags of stamina and enjoys the fast pace of working in a kitchen. You also need to be able to stay calm and work as part of a team during a frenetic service. As head of your section you need to be confident enough to manage the Commis Chefs working with you – and to give them clear instructions.
YOU WILL BE RESPONSIBLE FOR:
Preparing, cooking, and presenting dishes within your specialty
Helping the Sous Chef and Head Chef to develop new dishes and menus
Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety
Monitoring portion and waste control to maintain profit margins
You’ll probably have to work split shifts and at least 40 hours a week
Great cooking skills
An ability to delegate appropriately
A grasp of profit margins
The Hospitality & Catering diploma
City & Guilds diplomas in professional cookery
BTEC HND in professional cookery
Any health and safety and food hygiene courses
